Ingredients
(3 portions)
• 1 large leek
• 3 sweet potatoes (medium)
• vegetable stock (1 cube or 1 table spoon)
• water
• sun dried tomatoes (4-6)
Preparation
Chop potatoes and leek into small pieces and boil them until
soft in 2 separate pans. Prepare the veg stock separately with
hot water and put it on the side (use approx 300 ml of hot
water).
Once the leek and potatoes are ready, drain them and put
them in a blender, add the stock and blend until smooth
Serve with chopped sun dried tomatoes.
