I have found this recipe on ervegan website, I have changed the propotions a little bit. It is most likely the simpliest dish I have ever made, but it is delicious!

Ingredients (for 2 – 3 people)

2 large handfulls of sweet potatoe noodles (you can buy them ready in most supermarkets, or make them yourself using a spiralizer or julienne peeler)
1/2 glass of cahews (soaked in warm water for approx 2 hours, or overnight)
Lemon juice (squeezed out of 1/2 lemon)
1/2 red onion
1 garlic clove
1-2 glasses of kale (cut into small pieces)
1 table spoon of rapeseed oil
water
salt & pepper

​Preparation:

Drain the cashews and blend them together with lemon juice in a high speed blender, add water if the consistency is too thick), add salt and mix well.

On a pan fry garlic and onion until golden (not burn), add kale and keep mixing until the kale becomes soft. Add sweet potatoe noodles and keep stirfrying for a couple of more minutes, until the potatoe noodles get softer. Put everything in a large bowl and add the cashew sauce. Add salt and pepper and voila!
