Ingredients (for approx 6 burgers)

2 large courgettes
1/2 glass of oats (ground to flour like texture)
1/3 tea spoon of cayenne pepper
1 tea spoon of marjoram
1 tea spoon of turmeric
5 pieces of sun dried tomatoes (chopped)
rapeseed oil (1 tea spoon for frying)
1/2 red onion (finely chopped)
1 clove of garlic (crushed)
1 full table spoon of tomato puree

Preparation

Grate courgette (use the big grinder holes) and squeeze the water to remove moisture. Heat up rapeseed oil in the pan and fry garlic and onion on medium heat in a non-stick pan until golden, make sure you do not burn the garlic. Next add courgette and chopped sun dried tomatoes, as well as all the spices an keep frying until soft. Add oats and tomato puree, stir to make make sure all ingredients combine well.

Put the pan aside and let the mixture cool a bit. Heat up the oven to 200C and line up baking tray with baking parchment. Once the burger mix cools, form your burgers and place them in the tray. There is no need to use any oil, bake them for 30 mins (flip over the burgers once in the middle). Enjoy! 🙂
