Ingredients:

200mls of almond yoghurt
1/2 glass of coconut milk
1 glass of ground oats (flour like texture)
2 scoops of plant protein (I use either Vivo Life protein Maca and Salted Caramel or Sun Warrior chocolate flavour)
1/4 glass of desiccated coconut
1/2 tea spoon of baking powder
2 tea spoons of ceylon cinnamon
1 tea spoon of vanilla essence
1 apple (skin peeled, grated using big hole grater)
Maple syrup (to drizzle the pancakes)

Preparation

Mix all dry ingredients together until they are well combined. Next add, yoghurt, milk, apple, and vanilla essence, keep stirring until the mixture is ready. If it is too thick, add a bit more milk, if too runny, add more oats.

Heat up a non sticky pan, keep it on medium heat, there is no need to add any oil. Spoon one (or more depending on the size of your pan) pancakes worth of the mixture into the pan. Pancake is ready to flip when the edges are looking stiffer.

Serve with fresh fruit and maple syrup 🙂
